About the Recipe

This recipe is a staple in my house, as my husband & I enjoy this nearly every day for lunch! I like this salad because it is flavorful and easy to prepare when the day gets busy.

Green leafy veggies are a great source of folate, calcium and magnesium which helps protect and regulate our nervous system. They also contain vitamin K which not only keeps our bones strong but also supports healthy blood vessels!


  • 1 large salad bowl for mixing

  • 1/4 - 1/3, 16oz container of organic spring mix

  • 1/2 pint of cherry tomatoes 

  • 1/2 cucumber 

  • 1 tbsp apple cider vinegar

  • 2 tbsp of olive oil

  • 1/2 tbsp of Italian herb blend (*optional)


  1. Add spring mix to mixing bowl.

  2. Wash cherry tomatoes and cut each in half. Add to mixing bowl.

  3. Wash cucumber and chop as desired. Add to mixing bowl.

  4. Top with olive oil, apple cider vinegar, and spice mix.

  5. Mix contents of the bowl until all leaves are covered in oil mixture.

  6. Plate and enjoy!
